I was driving an El Camino, (I must say, it's a beautiful car) but then, the game makers REALLY screwed up. AND I MEAN, REALLY.
Get a vehicle, go in 3rd person.
Adjust your camera to the driver's side, then turn the wheel.
Try this with the El Camino. The wheel just turns right off the steering hook!

I don't want to have to do that online. Why isn't it possible in Single Player?

It is possible in single- player. Unfortunately, if you try it through the bridge it can be quite a pain and end up almost fully damaging your vehicle
Someone recorded this, if you skip to the 3:00 minute mark you can see hows it's done. Personally, I face my car towards the red & white barrier, shift out of it, leave the area (staying in shift) for about 10 seconds or so, then quick shift back and you car should be on the other side
